audrey's pancakes.

To usher in my last day at home, I made Dad pancakes.  They are delicious and just about as simple as you can get.  I'm not saying they're healthy, but a quick three mile run will burn them off. (that's what I did!)


Audrey's Pancakes

  • 2 cups flour
  • 2 Tbs. sugar
  • 2 tsp. baking soda
  • 2 tsp. baking powder
  • 2 cups buttermilk 
  • 3 Tbs. butter
  • 1 large egg

Mix it all up and you're good to go. (:

spinach, feta, pecans..

I was called on to make supper last night, which allowed me to check another recipe off of my pinterest food board!

I made this recipe, a delicious spinach salad with pecans, feta, dried cranberries and homemade dressing.  Definitely a success!  I used regular pecans (instead of candied) and left out the Nature Seasoning.  I also added chicken because, well, we're about as far as you can get from vegetarianism around here.

For the chicken, I pounded it, cut it in strips and then mixed it up with olive oil, minced garlic, salt, pepper and oregano.  I then tossed it around on a frying pan for a few minutes and voila!

salood.

I made a salad tonight. Folks, this is an accomplishment. I bake; I do not cook or prepare boring foods.

At first it looked like this, and only because Mom offered me her extra mushrooms, coated in olive oil and lime juice.  It was going to be a simple bowl of greens; I was impressed with myself for even drying the lettuce.


I thought that was good enough, but my sister was in the other corner of the kitchen whipping up shepherd's pie.  In an attempt to not be sorely outdone, I cut up some carrots and cherry tomatoes.  I've always hated carrots in salad.  All one does is chase those little boogers around the plate in frustration.  But I had a revolutionary idea tonight.  Cut them lengthwise, thank you very much.


(So the coloring looks like something from the 70s.  Food photography is an art which I do not possess.)

I even made salad dressing.  I like simple recipes.  Specifically the part where it gives you the option of throwing everything in a jar and shaking.


In other news..

Audrey broke the beaters while trying to whip her potatoes.
